One of the most popular Vietnamese soups is bun bo Hue. This dish is pretty similar to it, but it comes with a bonus meat -- pork knuckle or ham hock. The ham hock is a flavourful cut from the pig's lower leg. In this soup, it's sliced up along with tender pieces of beef. The broth is very flavourful with hints of lemongrass and a nice spiciness to it. Green onions or chives may be added to the soup. The noodles, like bun bo Hue, are thicker than your traditional pho noodles. They are tough to grab a hold of, so don't wear your best shirt unless you are a chopstick ninja.
