In the north, it's known as bún bò nam bộ (southern beef noodle), in the south it's called bún bò xào (noodle beef stir-fry). Whether you're upstairs or down, this dish is a tasty meal that's light and flavourful. Thin slices of beef are marinated in lemongrass, garlic, and often some oyster sauce. It's fried in a wok then placed on top of a combination of Vietnamese herbs and some rice noodles. For maximum enjoyment, crushed peanuts should be sprinkled on top. Mix everything together along with a slightly spicy nuoc cham as the dressing. It's pretty similar to bun thit nuong, except the meat is fried beef instead of grilled pork.
