Pig Ear Salad

If you're looking for something unique, try this Vietnamese salad out. A boiled pig's ear is sliced up and mixed with a fantastic combination of sweet, salt, sour, and spice. Laksa leaves are usually used (rau răm) along with garlic, chilli, ginger, coriander, lime juice, and fish sauce. The iciing on the cake is a generous sprinkle of peanuts on top. Gỏi tai heo is usually served with shrimp crackers. Place a mouthful of salad on the crunchy cracker and bite into it. From the soft almost rubbery pig's ear, to the crisp shrimp cracker, this dish is almost overwhelming with its combination of textures.
