Green Papaya Salad

The green papaya itself doesn't have that much of a taste, but it provides a soft but crisp texture. Often rice crackers add a crunchiness and a method of transportation to your mouth. The dressing is a mixture of fish sauce, lime juice, and sugar. Gỏi đu đủ can be topped with shrimp (goi du du tom thit), beef jerky (gỏi đu đủ khô bò), or pig ear (goi du du tai heo). Peanuts are often sprinkled on top.
